Eureka Moonshine Cookies

These cookies are easy, moist, soft and delicious!  You can use any flavor of Eureka moon you wish.  I used Gingerbread, but you can use Salted Caramel, Maple, Pumpkin Spice – use your imagination!

Eureka Moon Shine Cookies

1.5 c flour
1 tsp baking powder
1/2 tsp salt
2 Tbsp dry milk
1/2 c. melted butter at room temp
3/4 c. sugar
1/4 c. Eureka moonshine
1 tsp vanilla extract

In a bowl, mix dry ingredients.  In another bow, add the melted butter and sugar and beat well.  Then add the shine and vanilla extract to the butter sugar mixture and stir well.

Add the wet ingredients slowly to the dry flour mixture and mix well.  Knead well with hands to form cookie dough.

Refrigerate for about 15-20 minutes.  (No longer, for it may harden)

Preheat oven to 350 degrees.  Shape into balls and slightly press down to form cookie shape. I put these on parchment paper.

Bake for 10-12 minutes.  Brush the tops with what ever flavor you used,  cool, & transfer them to air tight containers.

Keep in mind, they might appear too soft when you take them our of the oven, but will be perfect once cooled!
